
On Thursday night, I hosted a few friends for a Christmas dinner! While my friends also brought sides and cookies, these are the dishes I made.
I always like to set out snacks for my guests to munch on as they are arriving and mingling. I had some Christmas candy in my pantry, so I made sure to include it.

I also tested out sausage and pinapple kabobs. They were a huge hit and the easiest appetizer ever! I literally threaded a toothpick through them and popped them in the oven for 15 minutes. I also keep Buffalo Chicken or Spinach Dip bites from Kroger in my freezer at all times. It was easy enough to pop these Buffalo Chicken bites in the oven when I heated the sausage-pineapple kabobs. Both were a hit!

For dinner, I served ham, roasted carrots, and ambrosia.
The ham was pre-cooked, so I only had to heat it up- thank goodness!
This recipe for roasted carrots is a favorite! They are roasted in butter, brown sugar, and cinnamon. They are best served with candied pecans and goat cheese.
Ambrosia is a holiday family tradition. As a kid, this was my favorite because the jello packet makes it appear to be light pink. It is simply a peach jello packet, cottage cheese, cool whip, crushed pinapple, and mini marhsmallows. Mix it all together and let it chill in the refrigerator.

Overall, the Christmas dinner was a success. We ended the night by watching the newest version of The Grinch on Netflix.
