Crockpot Gumbo Recipe: Fat Tuesday Edition

Yesterday, my friends and I had a Fat Tuesday celebration! It would not be Fat Tuesday without gumbo. I have made gumbo before, but I was trying a new recipe and had never cooked it for other people. It turned out to be super easy though and I think it was a hit!

Ingredients:

  • 1 cup butter
  • 3/4 cup flour
  • 1 red bell pepper- chopped
  • 1 green bell pepper- chopped
  • 3 celery sticks- chopped
  • 2 tablespoons minced garlic
  • 2 tablespoons of cajun seasoning
  • 4 cups chicken broth
  • 1 pound andouille sausage- sliced
  • 1.5 cups of okra- chopped (I used frozen for this!)
  • 2-3 bay leaves
  • 2 pounds boneless, skinless chicken breasts
  • 1 pound cooked shrimp (peeled, deveined, + no tail)
  • rice + crackers

Recipe:

Chop the bell peppers and celery.

On medium heat, melt the butter.

Whisk in the flour. Stir constantly.

Keep stirring until the roux begins to get a medium-brown color.

Add in the peppers and celery. Keep stirring.

Keep stirring.

Add in the chicken broth and you guessed it, keep stirring. Be careful to not let the roux burn, or you will have to start over.

Chop the sausage.

Add the celery, sausage, and chicken breasts to a crockpot. Add in the roux/vegetable mixture. Cook on low for 4-6 hours.

About 30 minutes before serving: remove chicken + shred it. Return chicken to crockpot and add in cooked shrimp.

I served the gumbo over rice and we had french bread to go with it, so we were nice and loaded up on carbs 😉

Overall, the recipe took about 30 minutes prep time and turned out amazing! Add in a King Cake + Hurricanes and you are all set for a Fat Tuesday celebration!
