Last night, I tried a new recipe and it turned out great! The recipe I based it on called for chicken breasts. I did a grocery pickup at Kroger yesterday morning and they subbed my chicken breasts for chicken tenderloins. At this point, I am not going inside the store, so I had to work with what I had. While this recipe would probably be better with chicken breasts, it still worked out nicely.
Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes
- 4-6 chicken breasts (or tenderloins)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 2 tablespoons fat free cream cheese
- 2 tablespoons fat free plain greek yogurt
- 1/4 cup grated Parmesan cheese
- 2 cups spinach // chopped
- 1 teaspoon red pepper flakes
- 1 tablespoon minced garlic
Preheat oven to 375 degrees.
Mix cream cheese, greek yogurt, parmesan, spinach, minced garlic, red pepper, and salt.
Stir until completely mixed.
Mix onion powder, paprika, salt, and garlic powder.
Drizzle chicken with olive oil and coat in the seasoning mixture.
Slit the sides of the chicken and insert spinach mixture.
Bake at 375 for 30 minutes, or until the chicken is lightly browned.
This recipe was super easy and turned out amazing! I can not wait until it is safe for me to have friends over, so I can make this for dinner one night!
Yesterday, my friends and I had a Fat Tuesday celebration! It would not be Fat Tuesday without gumbo. I have made gumbo before, but I was trying a new recipe and had never cooked it for other people. It turned out to be super easy though and I think it was a hit! Ingredients: 1… Read More Crockpot Gumbo Recipe: Fat Tuesday Edition
Last night was the Super Bowl, so I decided to host a watch party. Because my guests and I were not particularly interested in the game itself, we called it a “halftime show watch party.” Really though, we were just looking for good food and good company! We had far more snacks than we needed,… Read More Wing Stop Charcuterie Board

Hi, friends! Today I am sharing one of my favorite, easy dinner recipes: Sausage & Potatoes. The ingredients are simple: -1 can cream of potato soup -sausage (I use turkey sausage, but any precooked sausage will work) -chicken broth -cajun seasoning (my preferred seasoning is Slap Ya Mama) -potatoes (I normally use golden potatoes, but… Read More Blogmas Day 2: Crockpot Sausage & Potatoes
