Last night, I tried a new recipe and it turned out great! The recipe I based it on called for chicken breasts. I did a grocery pickup at Kroger yesterday morning and they subbed my chicken breasts for chicken tenderloins. At this point, I am not going inside the store, so I had to work with what I had. While this recipe would probably be better with chicken breasts, it still worked out nicely.
Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes

Ingredients:
- 4-6 chicken breasts (or tenderloins)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 2 tablespoons fat free cream cheese
- 2 tablespoons fat free plain greek yogurt
- 1/4 cup grated Parmesan cheese
- 2 cups spinach // chopped
- 1 teaspoon red pepper flakes
- 1 tablespoon minced garlic
Step 1:
Preheat oven to 375 degrees.

Step 2:
Mix cream cheese, greek yogurt, parmesan, spinach, minced garlic, red pepper, and salt.
Stir until completely mixed.

Step 3:
Mix onion powder, paprika, salt, and garlic powder.

Step 4:
Drizzle chicken with olive oil and coat in the seasoning mixture.

Step 5:
Slit the sides of the chicken and insert spinach mixture.

Step 6:
Bake at 375 for 30 minutes, or until the chicken is lightly browned.
This recipe was super easy and turned out amazing! I can not wait until it is safe for me to have friends over, so I can make this for dinner one night!
